Sushiya

Chef Peter Tempelhoff (of The World’s 50 Best Restaurants, FYN) partners with Chef Shin Takagi (of two-star Michelin restaurant Zeniya in Kanazawa, Japan) to offer authentic contemporary Japanese sushi with Sushiya to Time Out Market Cape Town.

Sushiya, meaning ‘Sushi Shop,’ is a testament to the chefs’ joint commitment to sustainability, high-quality craftsmanship, and authentic ingredients. From small-scale suppliers in Japan, to ethical fishermen in the Western Cape and organic farms from the Cape region, every element of Sushiya’s menu is carefully curated. Notably, the rice used is grown in Shin’s native Ishikawa, is nurtured by fourth-generation rice growers and aged for up to two years before being cooked in Cape mountain spring waters.

The menu highlights pani puri, considered to be the king of street food across India, which is a crispy hollow ball filled with potato, lentils, three chutneys and a spiced water. These puris are best enjoyed thrown into the mouth in one bite, creating a sensation that can only be described as an explosion of flavours. The exciting menu will showcase the savoury puris Kapoochka is known for, and the team will also introduce mouth-watering dessert puris.

Currently operating out of Makers Landing which (a V&A Waterfront food incubator initiative aimed at local food entrepreneurs), the family run business has grown and is now ready to spread its wings to Time Out Market Cape Town. The concept joins the market as part of a collaboration. Time Out Market Cape Town has offered one business within Makers Landing a 12-month residency in the Market to provide them with a growth opportunity. Kapoochka will receive business support and mentorship, working alongside some of the city’s best chefs and restaurateurs.
