These Scrumptious Protein Pancakes are the Ideal Post-Workout Treat [Recipe]

By using tapioca flour and Phyto Pro Pea Protein Isolate instead of regular flour, these simple protein pancakes good for your body and for your soul, especially after a great workout. Here’s how to make them:
Ingredients:
(Serves 4)
- 1/2 cup tapioca flour
- 1/2 cup Phyto Pro Pea Protein Isolate
- 1 tbsp ground flaxseed
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp Himalayan Crystal salt
- 1 cup unsweetened almond milk
- 1 banana, mashed OR 1 apple, puréed
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla powder
- coconut oil for cooking
Method:
In a bowl, combine tapioca flour, pea protein powder, flaxseed, baking powder, cinnamon and salt, and mix well.
Combine the rest of the ingredients in a second bowl. Slowly add half of this wet mix into the dry ingredients and stir continuously. Add the remainder of the wet ingredients little by little to avoid a runny batter, mixing well after each addition.
Add a little coconut oil to a griddle or pan and melt over a medium heat.Pour around 1/4 cup each of batter into the pan and cook for 2 – 3 minutes until bubbles begin to form on the surface. Flip and cook for another 2 – 3 minutes.
Repeat with the remaining batter.
