Sustainability Focused Restaurant, Riverine Rabbit, Opens in Cape Town this Spring

Running a restaurant in fickle Cape Town is tough, but, as we all know, when one restaurant door closes, another one opens. While the much loved ASH restaurant may have closed its doors, head chef Ash Heeger isn’t slowing down any time soon and is now focusing her efforts on a new concept that is less about the formality of fine dining and more about sustainable food prepared with passion. With plans to open in October this year, Heeger’s new Riverine Rabbit restaurant aims to be a true testament to sustainable dining in Cape Town.
Named after the almost-extinct Karoo animal, Riverine Rabbit, will offer a short 3-course menu, 5-course reduced tasting menu, and a 7-course dégustation paired with carefully curated wines. Also on offer at the new joint is an intimate Chef’s Table experience where guests can take a peek into the kitchen and interact with Ash.
Guests can expect to find all sorts of beautiful, creative flavour combinations on the menu which will offer something to suit a wide variety of budgets and tastes in a more environmentally conscious way. With an emphasis on inspiring others to reduce their carbon footprint, Riverine Rabbit hopes to create a foundation for sustainable food choices.
But the excitement doesn’t stop there, in addition to the environmentally conscious menu, the decor of the eatery will also take a more planet-friendly stance with local art being displayed on the walls and lots of greenery dotted around the space to accentuate the edible art served on the eatery’s plates.
