After a busy harvest season, a quiet atmosphere has descended in the eponymous cellar of Cathedral Cellar wines. Following another humbling but successful vintage at KWV, the hive of activity which characterised the harvest period has now turned to a time of settling and ageing in the cellar.
In this part of Cathedral Cellar’s wine story, its red and white wines are closely observed by Chief Winemaker Justin Corrans and his team before bottling takes place. Meanwhile, the Cathedral Cellar red wines are slowly developing their full aromas and flavours in barrel, while the white wines are gaining mouthfeel with extended lees contact.
The Cathedral Cellar’s wine portfolio includes a selection of exquisite wines, including Cathedral Cellar Cabernet Sauvignon, Cathedral Cellar Shiraz, Cathedral Cellar Triptych (a red blend), Cathedral Cellar Pinotage, Cathedral Cellar Chardonnay, and Cathedral Cellar Sauvignon Blanc. The labels depict the Cathedral Cellar with beautiful copper line drawings, paying homage to its most impressive feature: its 32 ‘stukvats’ (barrels), which measure approximately three meters in circumference. Cathedral Cellar wines’ very own Ambassador Chef, Mynhardt Joubert, played a pivotal role in making the story of Tannie Maria come to life: he was the head food stylist on set while filming in Prince Albert in 2021 who had to ensure that each recipe and dish on screen would do Tannie Maria’s deft cooking justice – albeit that these were inspired by, but not exactly the same as in the book. Despite unique challenges, such as seasonal ingredient availability during filming, his culinary expertise allowed him to adapt the recipes while maintaining the essence and flavours that captivated readers of the book.
With first-hand insight into the recipes, Chef Mynhardt has added his own unique twist to some of Tannie Maria’s dishes, and he is encouraging fans of Tannie Maria to do the same. “These recipes are hearty and traditional and are perfect food partners to Cathedral Cellar’s line-up of delicious wines,” says Chef Mynhardt.
