Recipe: Follow Zola Nene’s Easy One-Pan Spiced Roast Chicken

Let’s face it, cooking during the week can be a real chore. Luckily there are ways to simplify your life with easy one-pot meals that take the chore out of cooking. Just ask local chef, Zola Nene. She’s saving the day for over-worked, tired home cooks across South Africa with this recipe for an Easy One-Pan Spiced Roast Chicken.
Is there anyone out there who doesn’t love a good roast chicken? Easy to create and deliciously wholesome, roast chicken makes the perfect Sunday lunch for the family – coupled with crispy potatoes and herbed vegetables, of course.
Nene, recently put a spicy spin on this traditional dish and shared a detailed video on her Instagram, encouraging her followers to give her simple roast chicken recipe a try. In the video, the chef speaks of how roast chicken is a weekly staple in her house and her trick for cutting own on cooking time… using the microwave! Nene uses her LG NeoChef to cut down her cooking time on busy weekdays but the recipe should work in any convection oven-style microwave.
Zola’s recipe calls for baby potatoes, peppers, onion, lemon, garlic, rosemary, oregano and thyme for the veggie part of the dish. And a whole chicken, chicken spice, Garam masala spice, lemon, olive oil and salt and pepper for the main event – the roast chicken.
After prepping the veggies in a baking dish, Zola creates a special spicy sauce for the chicken and massaged it in evenly. She then places the chicken on top of the veggies, breast side down to start. Here’s where the LG NeoChef came in handy – the microwave oven works with Smart Inverter technology and has a specific setting for roast chicken. Zola clicked the Roast & Bake button, turned the dial to number 5 (for roast chicken), added the weight of her chicken and waited for the NeoChef to work its magic.
After removing the chicken from the microwave oven, Zola covered it with foil to lock the moisture. She explains that leaving chicken to rest for 10 minutes with foil on top ensures a juicy roast.
