Breakfast is the most important meal of the day and it’s true that ever since we learned to fry, boil, poach and scramble eggs those of us who love breakfast have been campaigning for a restaurant dedicated to the best and most important meal of the day. Ask any breakfast enthusiast and they will tell you that every restaurant in existence should serve breakfast all day. Luckily for the breakfast obsessed in Joburg some clever sausages have cottoned on to the need for such a restaurant and in less than a month we will be saying hello to all-new breakfast concept restaurant, Pablo Eggs Go Bar! Here are the details on this highly anticipated spot.

The new spot is set to open its doors in Melville at the beginning of April and we couldn’t be more excited! Because, let’s be clear, this new joint seems to be taking things very, very seriously. Pablo Eggs Go Bar Louis Roux, a barista and mixologist with Israeli food heritage. When coming up with the aesthetic design and menu for the restaurant, Roux also sought some help and guidance from the likes of Carolina Rasenti, of The Great Eastern Food Bar fame. Carolina is passionate about food and collaborating with aspiring restauranteurs and she worked with Louis in the initial stages of setting up the restaurant. Speaking in an interview on 702, Roux revealed that the eatery will serve breakfast every day of the week, day and night with every meal on the menu featuring eggs in some form.

The menu promises to offer a variety of clever dishes to tantalize your taste buds as well as an excellent selection of coffees from top-notch suppliers. But the food and coffee won’t be your typical coffee shop fare; no this menu promises to offer something special on every plate and in every glass. Each uniquely different egg dish will feature interesting ingredient pairings and diners can expect to see their eggs paired with everything from textured fruit and cheese to organically flavoured agar-agar bubbles. They’ll be serving a fancy-pants version of egg and soldiers or rather a Shakshuka Pan (a dish of pan-baked eggs) with grilled parma-asparagus soldiers dipped into panko-crusted soft eggs; swanky crepes or Malawa (sweet or savoury crepes from Yemen), and a gourmet take on the classic sub also known as Cubanos (toasted baguettes filled with a variety of fillings).

Even the coffees served are all kinds of different; at Pablo Eggs Go Bar each dish can be expertly matched with a unique coffee drink in a variety of flavours. And when the sun goes down, you can enjoy a range of signature cocktails along with your meal. Expect to find a few variations on the classic Bloody Mary cocktail as well as a menu dedicated to the much-loved breakfast Bellini!

But let’s be honest, when it comes down to it, we’re all just super excited to be able to enjoy a delicious breakfast and Bellini at any time of the day or night. As of the 1st of April late night snacking in Johannesburg will never be the same again!
