So yes, I do have a sweet tooth and I absolutely love chocolate, but then again, who doesn’t! That’s why recipes like these Chocolate Fudge Nut Brownies excite me. Theses little chocolate delights hit the spot when you’re having those cravings, but are also rich enough that you don’t feel the need to over indulge. That said, even if you were to pig out you’ll be filling your body with nutrients, antioxidants and fibre rich goodness. Now all you need to do is make yourself a batch. If you don’t believe me this week my little taste tester asked me; “but are they really good for me mum?” in pure disbelief that something so tasty could be beneficial to his body! That said I always encourage a balanced diet, and wouldn’t let him live off treats alone, healthy or not.

Recipe:

Ingredients:

1 cup of Peacan nuts
8 tablespoons of melted virgin coconut oil
1 cup of pitted dates, I like Medjool dates (about 10)*
1/3 cup unsweetened shredded coconut
1-2 tablespoons agave syrup or raw honey
1/4 teaspoon salt
4-5 tablespoons of raw cocoa powder

Method:

Place the nuts into a blender or food processor and blitz until finely chopped.
Add the dates and blend until combined.
Add all the other ingredients and blend to combine them until the mixture pulls together.
Press into a square on a piece of non-stick paper or into a lined baking tin.
Place in the freezer for 2 hours and then cut into small squares and enjoy!
