Healthy Chocolate and Chickpea Muffins

Keep reading for Taryn’s super healthy and super delicious recipe for Chocolate Chickpea Muffins – we’ve tried them and we still don’t believe there’s not a trace of sugar in them! 

My son, absolutely loves these healthy sugar-free, gluten-free Chocolate Chickpea Muffins – he even asked me to bake them for his birthday party at school so all his classmates could try them too and every child in the class gobbled them down. My son’s school doesn’t allow sweets or any other unhealthy treats in their lunchboxes so these are a great way to spoil my little man while making sure he eats healthy. I also served the cupcakes to a group of friends at a party and all my guests couldn’t believe they were sugar free! Here’s what you need to create these delicious treats.

Recipe:

Ingredients:

1 can of chickpeas
1/2 cup of honey or agave syrup
3 large eggs
1/3 cup of cocoa (I use raw organic cocoa powder as it’s filled with antioxidants and nutrients)
1tsp baking powder
3Tbsp virgin coconut oil
1 tsp vanilla extract.

Method:

Preheat the oven to 180c
Place everything into a blender, blend until smooth.
Pour into cupcake cases in a muffin tray and bake for +- 20 minutes.

Icing:

The icing was made from raw cocoa paste, honey and coconut oil.
